One of our most repeated meals. It’s the perfect recipe for when you know you have a busy week ahead and won’t have the time to cook or even think about what I want to eat for lunch or dinner. Broccoli is loaded with potassium, dietary fibre, and vitamin C. The dietary fibre in the broccoli is so high that it is regularly named on “high fibre” food lists. The balance between sodium and potassium is what allows our kidneys to function optimally. Note: it is possible to have too much potassium, though! Consult with a physician if you would like more information on this balance and why it matters for you.
