Avocado Spinach Sandwich
These two main ingredients are such superfoods. Avocado is loaded with healthy fats and TONS of dietary fibre. The fat in avocados is called ‘monounsaturated’ fat which is only found in plant foods. Benefits of this fat arose during studies on the Mediterranean diet, which found that those with these high fat diets had reduced heart problems.
What you’LL need:
4 slices whole wheat bread
2 tbsp vegenaise eggless mayonnaise
1 sliced avocado
1 cup spinach leaves
How to make it:
Spread the mayonnaise onto both slices of bread.
Slice the avocado lengthwise, and lay it onto one side.
Add spinach on top. The spinach is also good when cooked and wilted first.
