Broccoli Pasta

THE GOODS:

Broccoli is loaded with potassium, dietary fibre, and vitamin C. The dietary fibre in the broccoli is so high that it is regularly named on “high fibre” food lists.  The balance between sodium and potassium is what allows our kidneys to function optimally. Note: it is possible to have too much potassium, though! Consult with a physician if you would like more information on this balance and why it matters for you.

WHAT YOU’LL NEED:

Box of 12 ounce pasta

3 tbsp plantbased butter

3 handfuls fresh spinach

2 1/2 cups plantbased mozzarella shreds

1 tsp garlic powder

1 cup plantbased milk

Sprinkle salt & pepper

HOW TO MAKE IT:

  1. Add the plantbased butter to a saucepan on medium-high. Allow to melt.

  2. Add in the mozzarella shreds, garlic powder, and plantbased milk. Mix it all together, then add the fresh spinach.

  3. Boil your broccoli and pasta together in salted water, following the directions on the box.

  4. Mix the broccoli, pasta, and cheese sauce together.
