Mushroom Lettuce Wraps

The Goods:

This one is especially amazing when you’re having people over, even for the meat eaters! It’s easy to make and everyone can make their own wraps for themselves once you’ve got the mixture ready to go and the romaine lettuce out. Mushrooms have tons of amazing properties, including lots of protein and fibre when compared to veggie counterparts.

What You’ll Need:

filling:

1/2 package extra firm tofu

2 cups chopped cremini mushrooms

1 can water chestnuts, drained

1 tsp grated ginger

1 tsp minced garlic

1 package romaine lettuce

sauce:

2 tsp sesame oil

1 tsp soy sauce

2 tbsp rice vinegar

How To Make It:

  1. Drain and rinse the water chestnuts

  2. Chop together the tofu, mushrooms, chestnuts, ginger and garlic

  3. Sautee altogether for 5 mins on medium-high

  4. Pour the sauce on top

  5. Spoon the tofu mixture into the romaine lettuce leaves
